Dipping Sauce
(adapted from Hungry-girl.com).
This sauce is great with artichoke

Mix equal parts of your favorite Amy's salsa with Greek Yogurt and serve it with cooked artichoke.

Artichokes cook quickly in the microwave.

Trim off the spiky top part of the artichoke, trim down the woody stalk and remove some of the small outer leaves. Put one trimmed artichoke in a covered dish with 1/2 inch of warm water. Microwave for 6-8 minutes. Let stand a minute or two before uncovering. Test leaves to see that they detach easily. If they do not, the artichoke isn't quite ready and should be placed back in the microwave for 1-2 minutes longer.
One at a time, pull off leaves, dip in the sauce, scrape against your teeth and discard.

Easy Tomato chutney
This chutney is so simple and goes great with Amy’s Samosa Wrap or Amy’s Tofu Spinach Wrap

Combine:
2 cups diced plum tomato (canned or fresh)
3 tablespoons brown sugar
3 tablespoons cider vinegar
1/8 teaspoon Garam Masala seasoning
1 minced garlic clove
Place in a small saucepan; bring to a boil. Reduce heat to medium; cook 20 minutes or until thickened.
